We are honored to host Anna Galofre of Valldolina Winery, showcasing wines from the unique Massís del Garraf terroir; a rugged, high-altitude region south of Barcelona defined by ancient limestone. The Galofre family practices organic, low-intervention viticulture to produce wines of crystalline purity and saline freshness. Join us as we explore four iconic bottlings that celebrate the distinct Mediterranean character of her family estate.
NV VallDolina Cava Brut Nature
Sourced from rugged high-altitude vineyards, this traditional blend of Xarel-lo, Macabeu, and Parellada is aged over 24 months on the lees. Crafted without dosage (Brut Nature), this crystalline Cava leads with notes of crisp green apple and toasted almond, finishing with a piercing, saline minerality that reflects the limestone terroir.
VallDolina Bivac
This textured, high-altitude white blend balances sun-drenched ripeness with a distinct, salty snap. It offers elegant notes of white peach and wild mountain herbs, supported by a vibrant, crystalline acidity. This sophisticated, site-driven white highlights the profound elegance achieved in the challenging, limestone-rich coastal mountains.
VallDolina ‘Ona’ Penedes Rosat
The ‘Ona Rosat' is a vibrant, site-driven expression of the Garraf mountains, focused on energy and aromatic brightness. It opens with lifted notes of wild strawberry and fresh citrus zest. Lean and refreshing on the palate, it has a distinct mineral backbone and a saline snap that keeps the delicate red fruit in crystalline balance.
VallDolina Marselan Natural
A rare, compelling natural expression of Marselan (A cross of Cabernet Sauvignon and Grenache) thriving in the estate’s sun-drenched, limestone-rich parcels. It presents a deep, plush profile of dark bramble fruit and black plum, yet remains anchored by the signature Valldolina crystalline freshness and a subtle, savory earthiness. This is an approachable, low-intervention red showcasing the incredible stylistic diversity of this rugged, high-altitude terroir.
