For our Wine Down Thursday, we explore three white wines that challenge convention and celebrate the overlooked corners of Spanish viticulture.
We open on the Basque coast, where Txomin Etxaniz's Txakolina arrives electric with Atlantic energy — razor-sharp acidity, a whisper of effervescence, and the unmistakable salinity of the Cantabrian Sea. From there we travel south to Valencia, where Baldovar resurrects the near-extinct Merseguera grape, a variety that stubbornly survived centuries of obscurity to reclaim its rightful place among Spain's indigenous treasures. We close in Alt Penedès, where Ànima Mundi Grès channels the ancient soul of Catalonia through Xarel·lo grown on dramatic calcareous sandstone — a meditative, mineral farewell to an extraordinary journey across Spain.
